Not sure what western genre would mean or if this would fit, but Lonesome Dove was really good.
Blood Meridian by Cormac McCarthy
Warlock by Oakley Hall
Non fiction: Legacy of Conquest by Patricia Nelson Limerick
The devil knows how to ride by Edward Leslie. It’s about William clarkequantrill and his confederate raiders
The Wildwood Boys by James Carlos Blake is a good one about Captain Quantrill, Bloody Bill Anderson, and the western side of the Civil War.
For non-fiction I strongly suggest A Stillness at Appomattox by Bruce Catton.
A book I recently read that incorporates both of these things is Angels of North County by T. O. O’Connor. The character study is incredibly interesting.
